On the western most tip of the island of Jamaica there lies the beach town of Negril. The little community is known far and wide for its long sandy beaches and rising black cliffs lying just to the south of town. There are two theories on the origin of the name 'Negril.' One account points to the Spanish and their choice to name the area after the black cliffs, as "Negrillo," which was later shortened to "Negril." Another theory tells the story of the Spanish landing at what is now Negril and being amazed by the vast population of black eels along the west coast of the island. Thus, they named the area "Negro Eels" and "Negril" was gradually adopted. Either way, the black cliffs are still in residence but the eels are not!

Norma's on the Beach at Sea Splash has earned a very superior two stars from Frommer's travel guides. The namesake of the restaurant is said to be the finest chef in Jamaica, but she rarely visits the establishment. Her recipes are celebrated all over the country, and have spawned several restaurants. The chefs at Norma's have apparently done justice to the famous chef's recipes, as she has given her seal of approval for their use there.

The dishes begin with the simple ingredients of the region; callaloo, papaya, Jamaican pumpkin, and of course local seafood (no black eels!). Only corn-fed and free-range chickens are used, as well as grass fed goats and cows. One favourite dish is the jerk pork marinated in jerk sauce, grilled and served with a jerk glaze.

Negril's own Rockhouse Restaurant is located within the Rockhouse Hotel, and overlooks the rocky inlet where the Spanish may have encountered all those eels! The staff at the establishment prides themselves on providing the finest dining experience for their guests. The food is an excellent account of all historic elements of classical Jamaican cuisine; Amerindian, African, Spanish, English and Asian.

The most enjoyable dishes are those using a fusion of local ingredients, rich sauces, curries and sweet tropical fruits. Of course, being a Caribbean island means a wealth of fresh seafood and Rockhouse knows how to present it all. Lobster, marlin, crab, it is all here and absolutely mouth-watering!

With such a tumultuous past, it is no surprise that Jamaica's cuisine bears the marks of every culture to brighten its shores. Yet those with a love for food have managed to bring all those elements together into a culinary style like no other on earth. Jamaican food is surprising, spicy yet sweet, vibrant yet not overpowering. Alas, it is uplifting to the soul!
